Cover Crop Pesto

Ingredients:

2 heaped cups of fava greens, leaves only, blanched

1 large bunch cilantro

1 cup walnut halves, roasted

1 cup olive oil

½ cup parmigiano reggiano, grated

2 cloves garlic, raw

2 teaspoons salt

A few good cracks of black pepper

Blend ingredients together roughly to allow stubborn texture; serve as an alternative to hummus or spread on rustic loaf slices
