Years ago we experienced the vibrancy of fresh pressed olio nuovo while traveling in Italy, and upon our return planted the four great Tuscan varieties of olive trees (Coratina, Frantoio, Leccino, Pendolino) here on the SCRIBE farm.
After we picked the last of our grapes, we harvested, pressed and bottled our small but precious 2023 olive crop.
The resulting oil is green and peppery. In the Hacienda kitchen, we use it simply and generously to showcase its energetic freshness.

Fior di Latte Ice Cream with SCRIBE Olive Oil and Sea Salt
The quality of the ingredients really drives the flavor of this dish so buy the best milk and cream you can find.
1 ¼ cup sugar
¼ cup cornstarch
Pinch of sea salt
2 ½ cup whole milk
1 cup cream
SCRIBE olive oil for drizzling
Flaky salt for finishing
Pour the sugar, cornstarch and a pinch of salt into a medium saucepan and whisk to combine until all the lumps are gone. Add about 1 cups of the milk and place it over medium heat. Bring the mixture to a simmer and cook for 1 minute, whisking all along. Pour the cooked milk into a mixing bowl. Add the rest of the milk along with the cream and whisk to combine. Place the bowl in the refrigerator to cool. Or you can place the bowl in an ice bath in the refrigerator if you want to speed the chilling process along. Once chilled, pour the ice cream mixture into your ice cream machine and freeze it according to your device’s instructions. Once it’s done churning, move the ice cream to a container and place it in the freezer for a minimum of 4 hours, preferably overnight until frozen.
To serve, scoop the ice cream into a bowl, pour over a generous drizzle of new olive oil and a pinch of flaky salt.
